Stupid question maybe. I am noticing that my girls are storing a lot of pollen in the honey supers. Is this something I should be concerned about regarding my honey harvest or is it normal and not a problem?

I was told it is ok to harvest the bee bread and honey

Unless your in a pollen heavy area, it'll mostly go away as the season progresses and the brood nest starts getting backfilled for winter. Honey supers are their cupboards, a place to put things to keep them out of the way.
