That's because what you are seeing at 36,000ft+ isn't condensed liquid water because condensed liquid water won't remain as such for long at around -70 degrees F / -60C .

What you're seeing is ice crystals; they will eventually evaporate (sublime), it's a very slow process.

Contrails are nothing new; you see all those 8th Air Force photos from WW2 of whole Bomb Groups in the air with huge contrails behind them.
