Title: Apple skin crisps

Judy bought two bushels of apples this week. She has been making apple sauce, apple butter and apple pie. She was giving the cows all of the skins. My nephew took some of them to eat. She then asked me if she should try drying them. Of course I said yes. She cut the skin shavings to about 2inches, dipped them in cinnamon and sugar and put them in the drier.
They are fantastic. We already ate 2 pint jars of them and the drier has new load of them ready to come out.
She still has a bushel and a half to process, yea.

What a great idea Jim. I think it may cause a problem. How would you stop eating them?

How long were they in the dehydrator? My apples are just flowering now. It could be something worth trying later in the year. Did Judy pop them in lemon juice to stop them browning or was that not a requirement? Sounds like a top snack for kids and big kids alike.

They are very irresistible. I?m eating some right now. No lemon, cut the skins off, shake in cinnamon and sugar and place in dehydrator. That is it. 24 hours plus to dry.

Do they actually get crispy in a tabletop dehydrator ?
I've done similar with thin apple slices (with a short soak in diluted lemon juice), but they end up soft and a little rubbery. .. unless they're freeze dried.

They are very crispy. When I bite into them they snap right off.

Terri,
It takes a lot of apples to make one jar full. Judy has made four pints of them and 2 are gone and we are working on number three. Good thing is the dehydrator is full right now and Judy still has lots of apples left.
If we were making enough to put some in storage, I would use the Earl a meal to vacuum out the air in the jars and they will last a very long time.

I?m with you Animal. I find myself checking apple prices at the supermarket to see what I can buy. Looks like some apple pie, apple crumble and crispy apple skins coming up.

If you use a standard automatic apple peeler the skin comes off in one long string.  Then you can just chop them to the length you want.  Peeling and coring is 10 times faster also.  Simple machine.

We have an apple peeler, the type that peels the whole apple in one strip, but Judy does it with an old fashioned hand peeler. You get about 2-3 inch strips.
