Ethiopian is quite nice.  Complex.  Sometimes, depending on how it's roasted, it can taste very fruity.  My favorite was always Papua New Guinea but either it's the after effects of Covid (my taste buds lost their marbles) or the something at the source or changes in weather, but lately it is not a flavorful to me.  It always used to have a very rich wine flavor.  Mexican is hard to beat if you like smooth coffee.  When I'm drinking it it is pleasant and before I know it I've drunk it down to the last drop more quickly than other coffees.  As long as you don't burn the beans (ala Starbucks) I haven't had one I didn't like.  Brazil yellow bourbon is another favorite for me.  And there's a lot to be said for the classic Colombian.
