Testing Honey

I have set my bees in the middle of about 1 acre of fruit trees this year. I am hoping to change the taste from our typical spring honey which is pretty much just clover honey. Is there anyway to test honey to see what makes up your honey?

It is done by identifying the pollen, but I don't know who does it commercially, if anyone.

Texas A&M test honey. If you are blessed by living in Texas the cost is $60.00, I have no idea about alien honey.

I wonder if Auburn will do this? AT the very least I can call Texas A&M and see if they will.
