What we do is get a big pot of water, bring it to a boil, then drop a couple of tomatoes at a time in it. I think the time is either one or two minutes then transfer them to the sink. In the sink is very cold water with ice in it. This will make the skin wrinkle and come loose. Cut 'em in half/quarters and put them in the quart jars.

I have done th same as you except there was no ice. It peeled easy.
