The high fat version probably wouldn't freeze as well.  Honestly, the popsicle idea is appealing to me   :cheesy:  I love hot soup, but not so much in summer.  This might be a fix!

Good post Sal, brings back memories. We did 3 pigs a year when I was growing up and we also cured the bacon the same way.. Ground and seasoned our sausage as well.

I do want to cure a ham. There are still a couple hanging in the great grandparents old home place bedroom. They are just hollow castings that still hold the shape, but they lived off the land way back in the woods.
