Infused or spiced honey recipes

Anybody have good directions on infusing or spicing honey?

I have tried allspice and cinnamon spiced honey before and with autumn and winter arriving soon thought they would make good condiments for hearty dinner rolls. Anyone know a good ratio? Will the spice settle out?
